Wild Garlic Soup

If you like garlic this is a great simple soup,,,

I am lucky that the Ghyll (small valley) in front of my house which in April fills with wild garlic. I have promised my self that one day I would use it. Today I made a wild garlic soup.

For 2 people

Indgrdients

1 medium potato diced
1 white onion, peeled and chopped roughly
1 leek, chopped and washed
125ml white wine
2 sticks of celery, washed
Approximately 100g of wild garlic (two large handfuls). Make sure this is well washed and drained dry.
1 pint of chicken or vegetable stock
Salt and pepper if necessary
Vegetable oil and butter for frying ingredients
1 desert spoon of double cream

Method

Fry the onion until soft in a pan with the vegetable oil and butter.
Add the diced potato, celery and leek and continue to cook until soft.
Add the wine and reduce by half.
Add the stock and bring to the boil and simmer for 15 min.
Add the wild garlic and cook down briefly
Blend in 3/4 of the soup in a food processor until smooth
Add back into the pan and mix (gives the soup some texture)
Add 1 desert spoonful of double cream
Add the seasoning and serve.
